{"id":1327,"date":"2021-01-20T15:40:00","date_gmt":"2021-01-20T15:40:00","guid":{"rendered":"https:\/\/tipsforahealthylife.eu\/?p=1327"},"modified":"2021-01-20T15:40:00","modified_gmt":"2021-01-20T15:40:00","slug":"minestrone-soup","status":"publish","type":"post","link":"https:\/\/tipsforahealthylife.eu\/index.php\/2021\/01\/20\/minestrone-soup\/","title":{"rendered":"Minestrone soup"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-1328\" src=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2021\/01\/105276769-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2021\/01\/105276769-225x300.jpg 225w, https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2021\/01\/105276769-768x1023.jpg 768w, https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2021\/01\/105276769.jpg 800w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n4 rashers of higher-welfare smoked streaky bacon, optional<br \/>\nolive oil<br \/>\n1 clove of garlic<br \/>\n2 small onions<!--more--><br \/>\n2 fresh bay leaves<br \/>\n2 carrots<br \/>\n2 sticks of celery<br \/>\n2 large handfuls of seasonal greens, such as savoy cabbage, curly kale, chard<br \/>\n1 vegetable stock cube<br \/>\n1 x 400 g tin of quality plum tomatoes<br \/>\n2 x 400 g tins of beans, such as cannellini, butter, or mixed<br \/>\n100 g dried pasta<br \/>\nParmesan cheese, to serve<br \/>\nextra virgin olive oil<\/p>\n<p><strong>How to:<\/strong><\/p>\n<p>Put a large shallow casserole pan on medium-high heat.<br \/>\nFinely slice the bacon, if using, and sprinkle into the pan with 1 tablespoon of olive oil, stirring occasionally while you prep your veg.<br \/>\nPeel and finely chop the garlic and onion, adding the garlic to the pan with the bay leaves as soon as the bacon turns golden, followed by the onions.<br \/>\nTrim and chop the carrots and celery into rough 1cm dice, adding to the pan as you go. Remove and finely chop any tough stalks from your greens and add to the pan. Cook for 10 to 15 minutes, stirring regularly, or until softened and caramelized.<br \/>\nCrumble in the stock cube, pour in the tinned tomatoes, breaking them up with your spoon, then add 1 tin\u2019s worth of water.<br \/>\nPour in the beans, juice, and all, then add a pinch of sea salt and black pepper.<br \/>\nShred your greens and sprinkle into the pan, top up with 600ml of boiling kettle water, then add the pasta. Cover and leave to simmer for 10 to 15 minutes, or until the pasta is just cooked and the soup has thickened to your liking.<br \/>\nSeason the soup to perfection, then serve it with a grating of Parmesan cheese and a drizzle of extra virgin olive oil. A sprinkling of fresh baby basil leaves will always be delicious, if you\u2019ve got them, and my kids enjoy it with a dollop of pesto on top, too.<\/p>\n<p><strong>Tips<\/strong><br \/>\nDon\u2019t waste any of your greens remove those tougher stalks, finely chop and add them to the base of your soup with the onion, carrot, and celery.<br \/>\nThis soup is great for using up odds and ends from your dried pasta packets. Pile whatever you\u2019ve got in a clean tea towel, then give it a good bash so it\u2019s all about the same size.<\/p>\n<p><strong>EASY SWAPS:<\/strong><br \/>\nWhen it comes to herbs, use what you\u2019ve got. Rosemary or thyme leaves would be delicious here, or even a sprinkling of dried herbs.<br \/>\nAdd another veg when you\u2019re frying the onions, if you\u2019ve got it, like leek, courgette, or potato.<br \/>\nUse whatever stock you can get your hands on of course, a fresh broth would be delicious, but a humble stock cube will absolutely do the job.<br \/>\nThis is lovely finished with a sprinkling of grated Parmesan cheese, but you could use Cheddar or a dollop of pesto from a jar.<br \/>\nOut of pasta?
