{"id":1454,"date":"2021-05-04T07:09:42","date_gmt":"2021-05-04T07:09:42","guid":{"rendered":"https:\/\/tipsforahealthylife.eu\/?p=1454"},"modified":"2021-05-04T07:10:07","modified_gmt":"2021-05-04T07:10:07","slug":"fish-pie","status":"publish","type":"post","link":"https:\/\/tipsforahealthylife.eu\/index.php\/2021\/05\/04\/fish-pie\/","title":{"rendered":"Fish pie"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-1455\" src=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2021\/05\/89156535-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2021\/05\/89156535-225x300.jpg 225w, https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2021\/05\/89156535-768x1023.jpg 768w, https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2021\/05\/89156535.jpg 800w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/p>\n<div class=\"row\">\n<div class=\"col-md-12 ingredient-wrapper\">\n<p><strong>Ingredients<\/strong><br \/>\n5 large potatoes<br \/>\n2 large free-range eggs<br \/>\n2 large handfuls of baby spinach<br \/>\n1 onion<br \/>\n1 carrot<br \/>\nolive oil<br \/>\n250 ml double cream<br \/>\nmature Cheddar or Parmesan cheese<br \/>\n1 lemon<br \/>\n1 heaped teaspoon English mustard<br \/>\n1 large handful of fresh flat-leaf parsley<br \/>\n450 g haddock, or cod fillet, skin off, pin-boned, from sustainable sources<br \/>\n1 whole nutmeg, for grating (optional)<\/p>\n<p><strong>Method<\/strong><br \/>\nPreheat the oven to 230\u00b0C\/450\u00b0F\/gas 8.<br \/>\nPeel and dice the potatoes into 2.5cm chunks, then put into boiling salted water and bring back to the boil for 2 minutes.<br \/>\nCarefully add the eggs to the pan and cook for a further 8 minutes, or until hard-boiled, by which time the potatoes should also be cooked.<br \/>\nAt the same time, steam the spinach in a colander above the pan. This will only take a minute. When the spinach is done, remove it from the colander and gently squeeze out any excess moisture.<br \/>\nDrain the potatoes in the colander. Remove the eggs, cool under cold water, then peel and quarter them. Place to one side.<br \/>\nPeel and finely chop the onion, then peel, halve and finely chop the carrot.<br \/>\nIn a separate pan, slowly fry the onion and carrot in a little oil for about 5 minutes, then add the double cream and bring just to the boil.<br \/>\nRemove from the heat and finely grate in 2 good handfuls of cheese, then squeeze in the lemon juice and stir through the mustard.<br \/>\nPick and finely chop the parsley and stir into the cream mixture.<br \/>\nSlice the fish into strips then place in an earthenware dish with the spinach and eggs and mix together, pouring over the creamy vegetable sauce.<br \/>\nThe cooked potatoes should be drained and mashed \u2013 add a bit of oil, sea salt, black pepper and a touch of nutmeg (if using). Spread on top of the fish. Don\u2019t bother piping it to make it look pretty \u2013 it\u2019s a homely hearty thing.<br \/>\nPlace in the oven for 25 to 30 minutes, or until the potatoes are golden.<br \/>\nServe with some nice peas or greens, not forgetting your baked beans and tomato ketchup.
