{"id":1566,"date":"2021-11-24T16:05:17","date_gmt":"2021-11-24T16:05:17","guid":{"rendered":"https:\/\/tipsforahealthylife.eu\/?p=1566"},"modified":"2021-11-24T16:05:17","modified_gmt":"2021-11-24T16:05:17","slug":"shakshuka","status":"publish","type":"post","link":"https:\/\/tipsforahealthylife.eu\/index.php\/2021\/11\/24\/shakshuka\/","title":{"rendered":"Shakshuka"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-1567\" src=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2021\/11\/100021003-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2021\/11\/100021003-225x300.jpg 225w, https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2021\/11\/100021003-768x1023.jpg 768w, https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2021\/11\/100021003.jpg 800w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/p>\n<p><strong>The Ingredients<\/strong><\/p>\n<p>200 g potatoes<br \/>\n200 g butternut squash<br \/>\nolive oil<br \/>\n3 mixed-color peppers<br \/>\n\u00bd a bunch of fresh flat-leaf parsley (15g)<br \/>\n2 cloves of garlic<br \/>\n1 teaspoon fennel seeds<br \/>\n1 teaspoon smoked paprika<br \/>\n1 teaspoon ground cumin<br \/>\n1 teaspoon rose harissa<br \/>\n1 x 400 g tin of quality plum tomatoes<br \/>\n4 large free-range eggs<\/p>\n<p><strong>How to:<\/strong><\/p>\n<p>Scrub the potatoes and squash (deseed if needed), slice into 1cm-thick chips, then place in a large non-stick frying pan on medium heat with 1 tablespoon of oil.<br \/>\nDeseed and roughly chop the peppers, adding them to the pan as you go.<br \/>\nPick the parsley leaves, finely slicing the stalks. Peel and finely slice the garlic and add to the pan with the parsley stalks, fennel seeds, paprika, and cumin, then cover and cook for 10 minutes, stirring regularly.<br \/>\nFlick over the harissa and scrunch in the tomatoes, then stir in \u00bc of a tin\u2019s worth of water, pop the lid back on and cook for a further 10 minutes, or until the potatoes and squash are soft, stirring occasionally.<br \/>\nRemove the lid, stir in the parsley leaves, and season with a pinch of sea salt, then cook until the sauce has thickened and reduced.<br \/>\nMake 4 wells with the back of a spoon, crack in the eggs, pop the lid on, and cook the eggs to your liking.
