{"id":1627,"date":"2022-01-26T03:56:00","date_gmt":"2022-01-26T03:56:00","guid":{"rendered":"https:\/\/tipsforahealthylife.eu\/?p=1627"},"modified":"2022-01-26T03:56:00","modified_gmt":"2022-01-26T03:56:00","slug":"kedgeree","status":"publish","type":"post","link":"https:\/\/tipsforahealthylife.eu\/index.php\/2022\/01\/26\/kedgeree\/","title":{"rendered":"Kedgeree"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-1628\" src=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/01\/64288356-224x300.jpg\" alt=\"\" width=\"224\" height=\"300\" srcset=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/01\/64288356-224x300.jpg 224w, https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/01\/64288356.jpg 330w\" sizes=\"auto, (max-width: 224px) 100vw, 224px\" \/><\/p>\n<p><strong>The Ingredients<\/strong><br \/>\n300 g brown rice<br \/>\n450 g undyed smoked haddock fillets , from sustainable sources<br \/>\n2 red onions<br \/>\n1 fresh red chilli<br \/>\n\u00bd a bunch of fresh coriander , (15g)<br \/>\n2 cloves of garlic<br \/>\n5 cm piece of ginger<br \/>\nolive oil<br \/>\n25 g unsalted butter<br \/>\n1 heaped teaspoon fennel seeds<br \/>\n1 heaped teaspoon curry powder<br \/>\n200 g leftover cooked greens , such as Brussels sprouts, Brussels tops, kale, cabbage, broccoli<br \/>\n200 g frozen peas<br \/>\n1 lemon<br \/>\n6 large free-range eggs<\/p>\n<p><strong>How to Prepare<\/strong><\/p>\n<p>Cook the rice in a pan of boiling salted water according to the packet instructions, then drain and refresh under cold water, leaving it in the colander.<br \/>\nAt the same time, poach the fish in a large pan of simmering salted water on a medium heat for 10 minutes, then carefully remove with a slotted spoon. Turn the heat up under the poaching water and bring back to a good simmer.<br \/>\nMeanwhile, peel the onions and finely slice with the red chilli (deseed if you like) and coriander stalks. Peel and finely chop the garlic and ginger. Place it all in a large frying pan on a medium heat with 1 tablespoon of oil and the butter, and cook for 10 minutes, or until soft but not coloured, stirring occasionally.<br \/>\nCrush the fennel seeds in a pestle and mortar, and stir into the pan with the curry powder.<br \/>\nSlice and add the leftover greens, along with the frozen peas, then gently fold in the rice with two spoons so it stays nice and fluffy.<br \/>\nFlake in the poached fish, gently fold again, season to perfection with sea salt, black pepper and lemon juice, then keep on a low heat for just 3 or 4 minutes while you poach the eggs to your liking in the simmering water.<br \/>\nPlace the eggs on top of the kedgeree, scatter over the coriander leaves, and a little extra chilli, if you fancy, then tuck in.
