{"id":1702,"date":"2022-03-31T09:48:04","date_gmt":"2022-03-31T09:48:04","guid":{"rendered":"https:\/\/tipsforahealthylife.eu\/?p=1702"},"modified":"2022-03-31T09:48:48","modified_gmt":"2022-03-31T09:48:48","slug":"spinach-sweet-potato-lentil-dhal","status":"publish","type":"post","link":"https:\/\/tipsforahealthylife.eu\/index.php\/2022\/03\/31\/spinach-sweet-potato-lentil-dhal\/","title":{"rendered":"Spinach, sweet potato &#038; lentil dhal"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-1703\" src=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/03\/spinach-sweet-potato-and-lentil-dhal-be8fae5-300x273.webp\" alt=\"\" width=\"300\" height=\"273\" srcset=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/03\/spinach-sweet-potato-and-lentil-dhal-be8fae5-300x273.webp 300w, https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/03\/spinach-sweet-potato-and-lentil-dhal-be8fae5.webp 375w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><strong>The Ingredients<\/strong><br \/>\n1 tbsp\u00a0sesame oil<br \/>\n1\u00a0red onion,\u00a0finely chopped<br \/>\n1\u00a0garlic clove,\u00a0crushed<br \/>\na thumb-sized piece of ginger, peeled and finely chopped<br \/>\n1 red chili, finely chopped<br \/>\n1\u00bd tsp\u00a0ground turmeric<br \/>\n1\u00bd tsp\u00a0ground cumin<br \/>\n2\u00a0sweet potatoes\u00a0(about 400g\/14oz), cut into even chunks<br \/>\n250g\u00a0red split lentils<br \/>\n600ml\u00a0vegetable stock<br \/>\n80g\u00a0bag of spinach<br \/>\n4\u00a0spring onions,\u00a0sliced on the diagonal, to serve<br \/>\n\u00bd small pack of\u00a0Thai basil,\u00a0leaves torn, to serve<\/p>\n<p><strong>How to:\u00a0<\/strong><\/p>\n<p>Heat 1 tbsp sesame oil in a wide-based\u00a0pan\u00a0with a tight-fitting lid.<br \/>\nAdd 1 finely chopped red onion and cook over low heat for 10 mins, stirring occasionally, until softened.<br \/>\nAdd 1 crushed garlic clove, a finely chopped thumb-sized piece of ginger, and 1 finely chopped red chili, cook for 1 min, then add 1\u00bd tsp ground turmeric and 1\u00bd tsp ground cumin and cook for 1 min more.<br \/>\nTurn up the heat to medium, add 2 sweet potatoes, cut into even chunks, and stir everything together so the potato is coated in the spice mixture.<br \/>\nTip in 250g red split lentils, 600ml vegetable stock, and some seasoning.<br \/>\nBring the liquid to a boil, then reduce the heat, cover, and cook for 20 mins until the lentils are tender and the potato is just holding its shape.<br \/>\nTaste and adjust the seasoning, then gently stir in the 80g spinach.
