{"id":1719,"date":"2022-04-16T12:19:44","date_gmt":"2022-04-16T12:19:44","guid":{"rendered":"https:\/\/tipsforahealthylife.eu\/?p=1719"},"modified":"2022-04-16T12:22:46","modified_gmt":"2022-04-16T12:22:46","slug":"carrot-patch-cake","status":"publish","type":"post","link":"https:\/\/tipsforahealthylife.eu\/index.php\/2022\/04\/16\/carrot-patch-cake\/","title":{"rendered":"Carrot patch cake"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1720 aligncenter\" src=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/04\/carrot-patch-cake-042690f-300x273.webp\" alt=\"\" width=\"300\" height=\"273\" srcset=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/04\/carrot-patch-cake-042690f-300x273.webp 300w, https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/04\/carrot-patch-cake-042690f.webp 375w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><strong>The Ingredients<\/strong><br \/>\n175ml vegetable oil, plus extra for the tin<br \/>\n75g\u00a0natural yogurt<br \/>\n3\u00a0large eggs<br \/>\n1 tsp\u00a0vanilla extract<br \/>\n200g\u00a0self-raising flour<br \/>\n250g\u00a0light muscovado sugar<br \/>\n2 tsp\u00a0ground cinnamon<br \/>\n\u00bc fresh nutmeg, finely grated<br \/>\n200g\u00a0carrots\u00a0(about three), grated<br \/>\n100g\u00a0sultanas\u00a0or raisins<br \/>\n100g pistachios, finely chopped (or slivered if you can get them)<br \/>\nFor the icing<br \/>\n100g slightly salted butter, softened<br \/>\n200g\u00a0icing sugar<br \/>\n100g\u00a0full-fat cream cheese<br \/>\n100g\u00a0fondant icing\u00a0or marzipan<br \/>\norange food coloring<\/p>\n<p><strong>How to :\u00a0<\/strong><\/p>\n<p>Heat oven to 180C\/160C fan\/gas 4. Oil and line a 900g loaf tin with baking parchment. Whisk the oil, yogurt, eggs, and vanilla in a jug. Mix the flour, sugar, cinnamon, and nutmeg with a good pinch of salt in a bowl. Squeeze any lumps of sugar through your fingers, shaking the bowl a few times to bring the lumps to the surface.<br \/>\nAdd the wet ingredients to the dry, along with the carrots, raisins, and half the pistachios. Mix well to combine, then scrape into the tin. Bake for 1 hr 10 mins or until a skewer inserted into the center of the cake comes out clean. If any wet mixture clings to the skewer, return to the oven for 5 mins, then check again. Leave to cool in the tin.<br \/>\nTo make the icing, beat the butter and sugar together until smooth. Add half the cream cheese and beat again, then add the rest (adding it bit by bit prevents the icing from splitting). Remove the cake from the tin and spread the icing thickly on top. Scatter with some of the remaining pistachios. Dye the fondant or marzipan orange by kneading in a drop of food coloring. Roll into little carrot shapes, then use a skewer to make indentations and poke a few pistachios in to look like fronds. Top the cake with the carrots, then serve.
