{"id":1742,"date":"2022-04-26T12:02:59","date_gmt":"2022-04-26T12:02:59","guid":{"rendered":"https:\/\/tipsforahealthylife.eu\/?p=1742"},"modified":"2022-04-26T12:02:59","modified_gmt":"2022-04-26T12:02:59","slug":"super-spinach-pancakes","status":"publish","type":"post","link":"https:\/\/tipsforahealthylife.eu\/index.php\/2022\/04\/26\/super-spinach-pancakes\/","title":{"rendered":"Super spinach pancakes"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1743 aligncenter\" src=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/04\/92507799-225x300.webp\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/04\/92507799-225x300.webp 225w, https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/04\/92507799-768x1023.webp 768w, https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2022\/04\/92507799.webp 800w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><strong>The Ingredients<\/strong><br \/>\n1 ripe avocado<br \/>\n350 g mixed-colour cherry tomatoes<br \/>\n100 g baby spinach<br \/>\n3 spring onions<br \/>\n\u00bd a bunch of fresh coriander , (15g)<br \/>\n1 lime<br \/>\nextra virgin olive oil<br \/>\n1 large free-range egg<br \/>\n1 mug of self-raising flour<br \/>\n1 mug of semi-skimmed milk<br \/>\nolive oil<br \/>\n300 g cottage cheese<br \/>\nhot chilli sauce<\/p>\n<p><strong>How to:<\/strong><\/p>\n<p>Halve, destone, peel and finely slice the avocado and quarter the tomatoes, then place in a salad bowl with a quarter of the spinach.<br \/>\nTrim, finely slice and add the spring onions and pick in the coriander leaves, then squeeze over the lime juice.<br \/>\nDrizzle with 1 tablespoon of extra virgin olive oil, season to perfection with sea salt and black pepper, toss to coat and put aside.<br \/>\nCrack the egg into a blender, add the flour, milk, remaining spinach and a pinch of salt and pepper, then blitz until smooth.<br \/>\nPlace a large non stick frying pan on a medium heat, rub the pan with a little olive oil, then pour in a thin layer of batter, swirling it up and around the edges. Cook on one side only for 2 minutes, or until lightly golden, then stack up on a serving plate and repeat.<br \/>\nTop each pancake with dollops of cottage cheese, the avocado salad, and a few good shakes of chilli sauce.
