Line a large baking sheet with parchment.<br \/>\nOn a cutting board, sandwich tofu between doubled layers of paper towels and slowly press down to remove moisture.<br \/>\nIn a medium bowl, whisk nutritional yeast, soy sauce, oil, sweet paprika, mustard, garlic powder, onion powder, and smoked paprika. Add tofu and mash into small pieces, then mix with sauce until combined; season with salt and pepper.<br \/>\nTransfer the tofu mixture to the prepared sheet and spread in an even layer.
