On a large baking sheet, toss shrimp with oil; season with salt and pepper.<br \/>\nBake shrimp until completely opaque, 5 to 7 minutes. Transfer to a wire rack and let cool slightly.<br \/>\nDressing &amp; Assembly<br \/>\nIn a large bowl, whisk mayonnaise, lemon zest and juice, and mustard; season with salt and pepper.
