{"id":277,"date":"2020-01-27T19:01:45","date_gmt":"2020-01-27T19:01:45","guid":{"rendered":"https:\/\/tipsforahealthylife.eu\/?p=277"},"modified":"2020-01-27T19:01:53","modified_gmt":"2020-01-27T19:01:53","slug":"sweet-sour-baby-chicken","status":"publish","type":"post","link":"https:\/\/tipsforahealthylife.eu\/index.php\/2020\/01\/27\/sweet-sour-baby-chicken\/","title":{"rendered":"Sweet &#038; Sour Baby Chicken"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-278\" src=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2020\/01\/chicken-a-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2020\/01\/chicken-a-300x200.jpg 300w, https:\/\/tipsforahealthylife.eu\/wp-content\/uploads\/2020\/01\/chicken-a.jpg 700w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>Half a whole corn-fed chicken, circa 600g<\/p>\n<p><strong>For the sweet and sour sauce:<\/strong><br \/>\n30 ml off the shelf Thai sweet chili sauce<br \/>\n1 \u00bd tbsps Chinese black vinegar<!--more--><br \/>\n35g sweet mango<br \/>\n35g green apple<br \/>\n35g white onions<br \/>\n1 tsp vegetable oil<br \/>\nSalt &amp; pepper<br \/>\n\u00bd lime<br \/>\nMixed salad leaves<br \/>\nMustard cress and desiccated coconut to garnish<\/p>\n<p><strong>For the Nam Jim marinade:<\/strong><br \/>\n2 tbsp fish sauce<br \/>\n3 tbsp fresh squeezed lime juice<br \/>\n2 cloves garlic<br \/>\n2 tbsp palm sugar<br \/>\n3 small red shallots chopped<br \/>\n3 birds eye chillies<br \/>\n2 tbsp chopped coriander leaves<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>1. Marinate the chicken overnight in Nam Jim sauce or teriyaki if preferred.<\/p>\n<p>2. Sprinkle chicken with salt and pepper.<\/p>\n<p>3. Slice and prep sweet mango and apple into cubes, and dice white onions.<\/p>\n<p>4. Sear the chicken on all sides in a non-stick frying pan with the vegetable oil then cool for 10 minutes.<\/p>\n<p>5. Cook the chicken in a roasting tin in a pre-heated oven at 110\u00b0C for 30 \u2013 35 minutes until golden brown.<\/p>\n<p>6. Heat up the Thai sweet chilli sauce and Chinese black vinegar in a saucepan. When hot, but not boiling, add the white onions, sweet mango and green apple, mix together and take off the heat, and put to one side.<\/p>\n<p>7. Slice the chicken into 4-5 pieces.<\/p>\n<p>8. Pour the sweet &amp; sour sauce onto the chicken before serving. Recommend serving in a hot skillet if you have one.<\/p>\n<p>9. Garnish with mustard cress and desiccated coconut.
