Freshly ground black pepper
1thinly sliced red onion
1/2 c.water
1/3 c.packed brown sugar
1/4 c.balsamic vinegar

Make the glaze: In a small saucepan over medium-high heat, whisk water, brown sugar, balsamic vinegar, soy sauce, and garlic until combined. Season with pepper. Bring to a boil then reduce heat and simmer until syrupy, about 10 minutes.
During the last hour of cooking, brush pork with glaze every 20 minutes.
