Spicy Veggie Bean Burgers

  • 60ml olive oil
  • 3 tbsp diced red onion
  • 2 tbsp diced black olives
  • 2 tbsp diced red peppers
  • 1 tsp diced jalapeno
  • 1 1/2 tbsp diced garlic
  • 1 tbsp diced artichoke
  • 110g tin black beans, drained
  • 110g tin white beans, drained
  • 110g tin chickpeas, drained
  • 225g rolled oats
  • 1/2 tsp Hungarian paprika
  • 1/2 tsp chilli powder
  • 1 tsp dried oregano
  • 1 tbp minced fresh parsley leaves
  • 1/2 tsp red chilli flakes
  • 1/2 tsp ground cumin
  • 1/2 tsp celery salt
  • 1/4 tsp ground sage
  • 2 tbsp seasoned breadcrumbs
  • 1 egg 

1) Add 30ml of the olive oil to a medium saute pan over medium heat and add the onion, olives, peppers, garlic, and artichoke. Saute until translucent. Remove and cool.

2) Add the vegetables to the beans and chickpeas and mix thoroughly. Add all the dry ingredients and the egg. Thoroughly mix all the ingredients and form into 4 patties. Cover and refrigerate for 30 minutes.3) Add 30ml olive oil to a saute pan, heat and cook the patties for 2 to 3 minutes per side.
