The Ingredients
1.2 kg mixed green and runner beans
2 cloves of garlic
extra virgin olive oil
red wine vinegar

How to:

Prep the mixed green and runner beans. Peel the garlic and finely grate into a little jug, add 2 tablespoons each of extra virgin olive oil and red wine vinegar, and a pinch of sea salt and black pepper, then mix well. Cover everything and store it overnight.

TO SERVE

Cook the beans in a large pan of boiling water for 7 minutes, or until just soft. Drain well, then return to the pan and toss with the dressing. Serve hot or at room temperature.
